Community Care: Cooking With The Residents of Aqua at Plaza 88

What you may not know about Kunye is that we are a full service wellness agency. The corporate facing side of our business is known as our Community Care Program.

This program was created from our belief that self-care should extend into community care. The vision was to see communities and organizations of various sizes, encourage and support their humans on their journey to connect with themselves, connect with each other, and elevate their lives as individuals and as a community.

We recently partnered with Starlight Investments to jump start their custom Community Care Program for residents of Aqua at Plaza 88.

In June, we organized a series of mindfulness sessions plus a special event session for over 300 residents. We invited Holistic nutritionist and long time friend of Kunye, Sisley Killem, of The Pure Life to lead a virtual cooking class and talk about healthy food and healthy bodies. Together, we made an asian inspired sesame salad, as well as her signature healthy snickers bites (YUM!).

Mindfulness is the key to well-being and we are always thrilled to partner with organizations who value mindfulness practices, and the mental health of their community members as much as we do. We’ll share more of our partnership with Aqua in the future, but for now, try the recipes Sisley created for the community for yourself and let us know what you think! Celery Juice But Tastier

Ingredients:

3- 5 stalks celery
1/2 small apple
Ginger (to taste - start with a thumbnail)
1/2 Lemon
1-2 cups of water (if using a blender)

Supplies:

Juicer or High powered blender
Nut milk bag or super fine mesh strainer

When new trends in nutrition and wellness emerge, we try to keep an open mind and tread curiously. So when celery juice became all the rage, we dove in to do some research before trying it for ourselves.

The findings? Mixed.

All that considered, we’re always looking for more ways to add more fruit and veg into our plant-centric diet. So if hoping on this bandwagon means adding an additional serving of nutrients to my day, I’m all for it.

Here’s my take on celery juice. Its perfect if you’ve tried celery juice before but can’t stand the taste. Apple adds the right amount of sweetness while ginger adds a bit of zing.

I make mine in my Vitamix blender but you can also run everything through a juicer and skip steps 5 & 6.


Step-by-step

  1. Wash and chop the celery into 1 inch pieces. Then add to your high speed blender. (I’m using this Vitamix)

  2. Wash your apply and cut in half. Set one half aside for a snack later and cut the other half into smaller pieces before adding to the blender.

  3. Cut and peel ginger

  4. Cut lemon in half and squeeze the juice into the blender.

    *Bonus - rub the remaining lemon onto the apple if you’re not going to eat it right away to help slow the oxidation and stop it from browning.

  5. Add 1 cup of water (more if needed) and blend on high until the contents combine.

  6. Run your juice through a strainer, cheese cloth or nut milk bag.

  7. drink immediately or chill in the fridge (should only be stored for no more than 12 hours)
